Ye Olde Barley

I’d be lying if I said I had high expectations for dinner tonight.  I was hoping for an empty pantry miracle and the fact that I was able to create something edible, well I’ll consider that the miracle.

Hulled barley leftover from my fourth blog post ever?  Ok!

Once I passed the shock that a. the barley was still good and b. I could pinpoint the exact moment I last used it, I dumped a couple cans of beans, oil and vinegar, and some spices in a cast iron pot and then gracefully spilled the spices all over the floor.  Oops!

This recipe wasn’t tasty enough to share.  But!  I do think the barley and bean combo was delish and would love to hear your suggestions on what ingredients I could have added to make it a share worthy dish.

Souped Up Soup, In Pictures

Breakfast: Leftover Swag Cereal & Almond Milk

Lunch: Souped Up Soup

Dinner: Barley & Bean Salad with Green Beans

The shining star meal of my day was most definitely the soup.  I usually keep a few Simply Asia soups in my pantry for when I’m feeling brothy and boring.  And today I souped up the brothy and made it far from boring by adding a cup of frozen kale and two tablespoons of hot and spicy marinade.  I can’t even describe how much this soup hit the spot – so spicy, so crunchy, so noodle-y!

Breakfast With Gram

With all of this traveling, it’s been super difficult to find time for the hour drive to see my gramma.  So last night as I hung out lazily at home, I called her to make breakfast plans, set my alarm for 7:30AM (yikes for a Sunday, right?) and stuck to it.  Crawling out of my cozy bed this morning was tough, but once I hopped in the car and sung my heart out to sweet tunes, all was good in my world.

I picked her up and we headed to her regular breakfast joint, The Ram’s, where we were cordially greeted by the owner.  The place was packed yet quaint and had the perfect amount of bustle for a weekend meal.  We both ordered our own version of the two egg breakfast and did some long overdue catching up.

And on our way home, we stopped by my uncle’s house to see The Pie!  It was a lovely Sunday morning indeed.

Oh, Saturday…

Last night was a slight whoops.  I had plans all week to meet Val and Meghann for a late happy hour: 7PM, Cheap, be there, done.  But earlier in the day, I found out our Tampa office was awarded a $26M project in a still downward spiraling construction market, so happy hour started a tad earlier than I had planned.  Like… 4PM, Yard of Ale, the entire office, yay?  See, whoops.

My uber productive, first Saturday at home in quite some time turned into not-so-productive.  I popped an umeboshi plum (a supposed hangover cure) and headed to the pool to meet Val and Amber.

It was HOT!  I lasted a solid, muggy hour and then attempted to hop back on the path of productivity.  It was looking good!  Fabric store, Village Health Market, fresh and sinless lunch.  I was going places!

… until I got home and found comfort in my couch.  In the battle of lazy Kristin vs. couch, the darn couch wins every time!!

Any tips on pulling it together when you’re feeling oh so lazy??
